Fall is Howling In

This wind is rocking all the tree tops that are surrounding me. I sit here and wonder if any of the trees are weak enough to give in and topple over. Hopefully, not today. I wanted to go riding today, however with the wind, I doubt it will be very fun. I think today will be just a day to let Muffin come graze in the yard and get a good brush down.

Worming Schedule

Corn Chowder Recipe

Corn Casserole

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream 1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Italian Sausage Soup

Cook 3/4 lb mild Italian Sausage, Add 1 small chopped onion and 2 cloves of garlic, minced. Cook until sausage is done and onion is softened. Add 2 cans of diced tomatoes and 32oz of fat-free chicken broth. Bring to a boil. Cover, reduce heat and simmer for 10 minutes. Add 2 cans of cannellini beans, rinsed and drained. Heat through. Garnish with Parmesian.
